Abstract

Os produtos de origem animal estão sujeitos a contaminação microbiana a partir de várias fontes, sendo que o próprio animal contribui com o organismo patógenos ou deteriorantes. A carne por ser um alimento muito perecível, necessita da utilização de métodos de conservação eficientes e eficazes, especialmente após o abate do animal. É sabido que as enfermidades causadas por alimentos contaminados têm como principais transmissores os manipuladores, equipamentos e utensílios mal higienizados. Diante da problemática do comércio de carne nas feiras livres, este projeto tem por objetivo propor a avaliação das condições higiênico-sanitárias e da comercialização de carnes e produtos derivados em feiras livres de Inhumas - GO e municípios vizinhos, a fim de analisar e identificar os possíveis riscos a saúde pública dos consumidores e estabelecer métodos de controle para prevenir os perigos da contaminação de alimentos.
